Recipe of Bean Soup with Rice and Smoked Bacon
Number of servings - 4
Ingredients:
Green beans - 11 oz (sliced into pieces)
Rice - 3-4 tbsp
Smoked bacon - 3 1/2 oz (diced)
Vegetable broth - 4 cups
Celery root - 1 pc. (peeled and diced)
Onions - 1 pc. (peeled and chopped)
Carrots - 1-2 pcs. (peeled and diced)
Zucchini - 1 pc. (sliced)
Red bell pepper - 1/2 pc. (seeded and diced)
Tomato paste - 2 tbsp
Olive oil - 1 tsp
Parsley to taste (finely chopped)
Salt and ground black pepper to taste

Directions:
Fry bacon in a saucepan . Pour olive oil, add onions and fry for 2 minutes.
Add carrots, celery and fry for 2 minutes. Pour the broth and simmer 10-15 minutes.
Add beans, pepper, rice and tomato paste. Salt and pepper to taste. Simmer 15 minutes, 5 minutes before the end of cooking add zucchini.
Pour cooked soup in bowls and garnish with chopped parsley.
Ready in: 40 minutes.
