White Bean Soup with Almonds





Number of servings - 4

Ingredients:

White Beans - 4 oz (soaked for 6-10 hours)
Water - 2 cups
Bay leaf - 1 pc.
Garlic - 2 cloves (chopped)
Leeks - 1 pc. (finely chopped)
Carrots - 1 pc. (peeled and sliced)
Chicken broth - 2 cups
Dry white wine - 1/2 cup
Ground almonds - 3 1/2 oz
Almonds - 1 1/2 tbsp (sliced and lightly browned)
Salt and ground black pepper to taste


Directions:

Pour water to saucepan, add beans, bay leaf, garlic, and cook for 30-40 minutes.

Add vegetables to saucepan with the beans. Pour chicken broth and wine, and simmer 20-30 minutes until ready. Salt and pepper to taste.

Pour cooked soup in bowls and garnish with sliced almonds.


Ready in: 80 minutes.
