Beef Soup Recipe with Dried Apricots
Number of servings - 4
Beef - 8 oz (sliced)
Dried apricots - 3 oz (washed and sliced)
Water - 6 cups
Potatoes - 2 pcs. (peeled and diced)
Onions - 1 pc. (peeled and finely chopped)
Butter - 1 tbsp
Tomato paste - 1 tsp
Herbs to taste
Salt and ground black pepper to taste
Pour water to saucepan, add beef and bring to boil. Simmer 50-60 minutes.
Melt butter in a pan and saute onions. Add tomato paste and fry 1 minute.
Add onions, potatoes and dried apricots to soup and cook 15 minutes or until tender. Salt and pepper to taste.
Pour cooked soup in bowls and garnish with herbs to taste.
Ready in: 80 minutes.
