Italian Beef Soup Recipe with Pasta





Number of servings - 8

Ingredients:

Beef - 1 1/4 lb.
Water - 12 cups
Carrot - 1 pc. (peeled)
Parsley root - 1 pc. (peeled)
Celery root - 1 pc. (peeled)
Onion - 1 pc. (peeled)
Pasta - 4 oz
Cream - 1 cup
Egg yolk - 4 pcs.
Bay leaf - 1 pc.
Black pepper - 5-8 peas
Cheese to taste (grated)
Salt to taste
Directions:

Put beef meat to saucepan, pour water and cook 50 minutes. Add vegetables, bay leaf, black pepper and simmer 30-40 minutes.

Strain the broth. Cut meat thin slices.

Add pasta to the broth and cook 12-15 minutes. Add sliced meat. Slightly cool the soup.

Whip egg yolks with fork and pour to soup along with cream. Stir well. Heat soup, but do not boil.

Pour cooked soup in bowls and garnish with grated cheese.


Ready in: 120 minutes.
