Cheddar Cheese Soup with Mustard
Number of servings - 6
Cheddar cheese 5 oz (grated)
Mustard - 2 tbsp
Broth 5 cups
Milk 1 cup
Leek (white part) - 2 pcs. (sliced thin half-rings)
Flour - 2 1/2 tbsp
Tomato paste - 1 tbsp
Smoked ham 4 oz (sliced thin strips)
Butter - 3 tbsp
Olive oil - 1 tbsp
Ground nutmeg to taste
Salt and red pepper to taste
Melt butter in a skillet and saute leek until golden brown, 5 minutes. Add flour, tomato paste, mustard and mix well.
Heat olive oil in a pan and fry ham fro 3-4 minites.
Pour the broth and milk to saucepan and bring to boil. Add leek and simmer 4-5 minutes.
Add cheese, ham and season with nutmeg. Salt and pepper to taste. Simmer 2-4 minutes.
Pour cooked soup in bowls and garnish to taste.
Ready in: 30 minutes.
