Recipe for Chicken Soup with Vermicelli
Number of servings - 6-8
Water - 12 cups
Chicken - 1 1/4 - 1 1/2 lb (sliced into medium sized pieces)
Carrots 1-2 pcs. (peeled and diced)
Onions - 1-2 pcs. (peeled and diced)
Potatoes - 3-5 pcs. (peeled and diced)
Vermicelli - 4-5 oz
Dill, Parsley - a few sprigs
Salt and ground black pepper - to taste
Add water in saucepan and bring to boil. Put the chicken in boiling water and simmer for 25-30 minutes. In the process of cooking remove the formed foam. Add the vegetables to the broth and salt. Cook for about 5 minutes.
Take out meat from the soup, cut into small pieces and put back into the pan. Add vermicelli and cook for about 5-7 minutes until cooking.
Pour cooked soup in bowls, garnish with greens and sprinkle with pepper to taste.
Ready in: 40-45 minutes.
