Recipe of Fish Soup with Couscous
Number of servings - 4-5
Water - 6 cups
Atlantic salmon fillet - 11 oz (diced)
Couscous - 3 tbsp (cooked as specified on packing)
Broccoli - 6 oz (florets)
Tomatoes - 2 pcs. (skinned, seeded and diced)
Carrot - 1 pc. (peeled and coarsely grated)
Garlic - 1 love (finely chopped)
Melted butter - 2 tbsp
Pink vinegar - 1 tbsp
Ground red hot pepper
Salt to taste
Pour water to saucepan and bring to boil. Add salmon fillet and simmer 15 minutes.
Heat melted butter in a pan. Saute carrots and garlic for 2-3 minutes covered. Add tomatoes and simmer 2 minutes.
Sauteed vegetables add to soup along with broccoli and cook 7-10 minutes. Season with pepper and vinegar. Salt to taste.
Add couscous to the soup and bring to boil. Remove from heat.
Pour cooked soup in bowls and garnish with greens to taste.
Ready in: 35 minutes.
