French Onion Soup with Parmesan Croutons
Number of servings - 4
Ingredients:
Beef broth - 6 cups
Onions - 1 1/3 lb. (peeled and thinly sliced)
Red onions - 1 1/3 lb. (peeled and thinly sliced)
Garlic - 2 cloves (crushed)
Flour - 2 tbsp
Olive oil - 1/2 cup
Butter - 3 tbsp
White wine vinegar - 2 tbsp
French baguette - 12 slices
Parmesan cheese - 1/3 cup (finely grated)
Salt and ground black pepper to taste

Directions:
Pour the broth to saucepan and bring to a boil. Remove from heat, cover and keep warm.
Heat 2 tbsp olive oil and butter in a large saucepan. Add all onions and garlic. Cook for 15 minutes stirring.
Add flour and vinegar. Cook for 5 minutes. Gradually pour in broth. Bring to a boil and simmer for 5 minutes.
Preheat grill to high. Place baguette in a large bowl and sprinkle with remaining olive oil. Season with salt and pepper, and toss well to combine.
Place on an oven tray and top with cheese. Grill for 5 minutes.
Pour cooked soup in bowls, top with croutons and garnish to taste.
Ready in: 45 minutes.
