French-Canadian Pea Soup Recipe





Number of servings - 10

Ingredients:

Dried peas - 1 lb. (soaked in water overnight)
Chicken broth - 12 cups
Leek - 3 pcs. (finely diced)
Celery - 3 stalks (diced)
Carrot - 2 pcs. (peeled and diced)
Ham - 8 oz (diced)
Ground white pepper - 1/2 tsp
Salt to taste
Directions:

Place soaked peas in a large saucepan, pour the broth and bring to boil.

Reduce the heat, add vegetables and simmer about 70-80 minutes.

Add ham and cook another 15 minutes. Add pepper and salt to taste.

Pour cooked soup in bowls and garnish to taste.


Ready in: 100 minutes.
