Dried peas - 1 cup (soaked in water overnight)
Pearl barley - 2 tbsp
Water - 7 cups
Carrot - 1 pc. (peeled and diced)
Onion - 1 pc. (peeled and diced)
Parsley root - 1/2 pc. (peeled and diced)
Olive oil - 1 tbsp
Greens to taste
Salt to taste
Directions:
Pour water to saucepan and bring to boil. Add peas and pearl barley, simmer 60 minutes.
Heat olive oil in a pan, saute carrot, onions and parsley root. Add to saucepan and cook 10-15 minutes until tender. Salt to taste.
Pour cooked soup in bowls and garnish with greens to taste.
