Recipe for Pea Soup with Zucchini





Number of servings - 6

Ingredients:

Yellow split peas - 1 cup (soaked in water overnight)
Zucchini - 2 pcs. (diced)
Chicken broth - 7 cups
Onion - 1 pc.
Olive oil - 1 tsp
Turmeric - 1/2 tsp
Salt and ground black pepper to taste
Directions:

Pour water to saucepan and bring to boil. Add peas and cook 45 minutes.

Heat olive oil in a pan and saute onion until golden brown. Add zucchini and fry 2-3 minutes more, stirring.

Fried vegetables and to saucepan and cook 5-7 minutes until tender.

Pour cooked soup in bowls and garnish to taste.


Ready in: 55 minutes.
