Pumpkin Soup with Semolina and Lemon
Number of servings - 4
Pumpkin - 1 1/4 lb. (skinned, seeded and finely diced)
Broth - 4-5 cups
Semolina - 1 tbsp
Sugar - 3 1/2 oz
Cloves - 2 pcs.
Juice and zest of half a lemon
Cinnamon to taste
Pour the broth to saucepan and bring to a boil. Add the pumpkin, cloves, cinnamon, lemon zest and semolina. Simmer 10-15 minutes until tender.
Add sugar and lemon juice to taste to the soup. Add a little butter, stir and remove from heat.
Pour cooked soup in bowls and garnish to taste.
Ready in: 35 minutes.
