Recipe for Pumpkin Soup with Bacon
Number of servings - 4
Small pumpkin - 1 pc. (peeled, seeded and diced)
Bacon - 9 oz (sliced)
Smoked bacon - 4 oz
Broth - 5 cups
Onions - 1 pc. (peeled and sliced)
Carrots - 2 pcs. (peeled and sliced)
Olive oil - 1 tbsp
Parsley - 1 tbsp (finely chopped)
Salt and ground black pepper to taste
Heat olive oil in a saucepan, saute the onions and bacon over low heat for 6-8 minutes until golden brown.
Add pumpkin, carrots and the broth. Bring to a boil and simmer for 15-20 minutes. Salt and pepper to taste.
Fry the smoked bacon for 5-6 minutes until crisp.
Pour cooked soup in bowls and garnish with fried bacon and chopped parsley.
Ready in: 40 minutes.
