Recipe for Pumpkin Soup with Leek





Number of servings - 6-8

Ingredients:

Pumpkin - 2 1/2 lb. (skinned, seeded and diced)
Leek (white part) - 2 pcs. (finely chopped)
Chicken broth - 6-8 cups
Onions - 1 pc. (peeled and finely chopped)
Butter - 3 tbsp
Potato - 1 pc. (peeled and finely diced)
Salt to taste
Directions:

Melt the butter in a frying pan, saute onions and leek. Add pumpkin and cook, stirring, over low heat for 5 minutes. Add sugar, salt and pepper. Simmer 5 minutes.

Pour the broth to saucepan and bring to a boil. Add potatoes and cook for 10-15 minutes. Add sauteed vegetables and simmer for 5-10 minutes until tender. Season with salt to taste.

Pour cooked soup in bowls and garnish to taste.


Ready in: 40 minutes.
