Recipe for Spicy Pumpkin Soup
Number of servings - 4
Pumpkin - 2 lb. (skinned, seeded and finely diced)
Broth - 4-5 cups
Onions - 1 pc. (peeled and finely chopped)
Garlic - 1 clove (minced)
Ground ginger - 1 tsp
Salt and ground black pepper to taste
Heat olive oil a frying pan, saute onions, garlic, pumpkin and ginger. Season with salt and pepper to taste.
Pour the broth to saucepan and bring to a boil. Add the sauteed vegetables and simmer for 10-15 minutes until tender.
Pour cooked soup in bowls and garnish to taste.
Ready in: 30 minutes.
