Recipe of Pumpkin Soup with Apples
Number of servings - 6
Pumpkin - 2 lb. (skinned, seeded and finely sliced)
Apples (Golden varieties) - 2 pcs. (skinned, seeded and finely sliced)
Vegetable broth - 6 cups
Onions - 1 pc. (peeled and finely chopped)
Olive oil - 2 tbsp
Greens to taste (chopped)
Salt and ground black pepper to taste
Heat olive oil in a saucepan, saute onions until soft. Add pumpkin and apples. Salt and pepper to taste.
Pour the broth and bring to a boil. Reduce heat, cover and simmer, stirring constantly, for 15-25 minutes.
Pour cooked soup in bowls and garnish with greens to taste.
Ready in: 40 minutes.
