Indian Tomato Soup





Number of servings - 4

Ingredients:

Tomatoes - 2 pcs. (skinned, seeded and diced)
Tomato paste - 1 tbsp
Onions - 1 pc. (peeled and diced)
Vegetable broth - 5 cups
Cilantro - 1 bunch (finely chopped)
Olive oil - 1 tbsp
Chili - 3 pcs. (seeded and finely chopped)
Garlic - 3 cloves (finely chopped)
Curry - 1/2 tsp
Ground chili pepper to taste
Salt to taste
Directions:

Saute the onions on olive oil until transparent, add ground chili and chopped garlic. Fry, stirring, 3-4 minutes. Add tomatoes and keep frying for 5 minutes, stirring constantly.

Pour the broth to saucepan, add tomato paste and fried vegetables. Season with curry and salt to taste. Bring to boil and simmer for 5-7 minutes.

Remove soup from heat, add chili peppers and chopped cilantro. Let stand for 10-15 minutes.

Pour cooked soup in bowls and garnish to taste.


Ready in: 40 minutes.
