Recipe of Tomato Soup with Corn and Bacon





Number of servings - 4-6

Ingredients:

Tomatoes - 5 pcs. (skinned and grated)
Bacon - 5-6 slices
Potatoes - 2-3 pcs. (peeled and diced)
Canned corn - 1 jar
Low-fat cream - 2 cups
Onions - 1 pc. (peeled and chopped)
Garlic - 1 clove (chopped)
Flour - 2 tbsp
Olive oil
Basil to taste
Ground red pepper to taste
Salt to taste
Directions:

Fry bacon until golden brown and place on paper towel.

Saute the onions until transparent, add chopped garlic and cook 1 more minute. Add flour, salt and pepper, and fry, stirring, for 2 minutes.

Pour broth to saucepan, add potatoes and simmer, covered, for 10-15 minutes.

Add fried onions with flour, corn, tomatoes and cream,. Stir, bring to boil and remove from heat.

Pour cooked soup in bowls, add fried bacon and basil.


Ready in: 30 minutes.
