Recipe for Vegetable Soup with Broccoli
Number of servings - 4
Leeks - 1 3/4 cups (chopped)
Flour - 2 tbsp
Vegetable broth - 5 cups
Broccoli - 1 3/4 cups (florets)
Carrots - 1 cup (chopped)
Zucchini - 4 pcs. (sliced)
Bell pepper - 1 pc.
Butter - 45g
Melt butter in a large saucepan and fry leeks for 5 minutes. Pour flour and stir for 1 minute.
Remove from heat, slowly, constantly stirring, pour the broth, bring to boil on high.
Add vegetables and simmer 10-12 minutes until ready.
Pour cooked soup in bowls and garnish with slices of bell pepper.
Ready in: 35 minutes.
