Recipe for Vegetable Soup with Smoked Bacon
Number of servings - 6-8
Smoked bacon - 5 oz (finely chopped)
Beef broth - 8 cups
Cauliflower - 1 lb (florets)
Green beans - 3/4 cup (chopped)
Carrots - 2-3 pcs. (peeled and finely chopped)
Tomatoes - 3 pcs. (skinned, seeded and diced)
Kohlrabi - 1 pc. (peeled and sliced)
Leek - 1 pc. (sliced)
Celery - 2-3 stalks (sliced)
Celery root - 3 tbsp (peeled and finely chopped)
Garlic - 4 cloves
Thyme - 1/2 tsp (chopped)
Allspice peas - 5 pcs.
Olive oil - 1 tsp
Salt and ground black pepper to taste
Heat olive oil in saucepan, fry bacon, add vegetables and simmer for 2-3 minutes. Add garlic, salt and pepper to taste.
Pour the broth to saucepan with vegetables, bring to boil and simmer for 20 minutes.
Add tomatoes and simmer for 5 minutes.
Pour cooked soup in bowls and garnish with greens to taste.
Ready in: 40 minutes.
