Recipe of Vegetable Soup with Beans





Number of servings - 6

Ingredients:

Cauliflower - 1 1/4 lb (florets)
Potatoes - 14 oz (peeled and diced)
Carrots - 2-3 pcs. (peeled and diced)
Onion - 1 pc. (peeled and diced)
Celery root - 1/4 pc. (peeled and diced)
Leeks - 1 stalk (diced)
Green beans - 1 cup (sliced)
Broth - 6 cups
Bay leaf - 1 pc.
Olive oil
Salt and ground black pepper to taste
Directions:

Saute the onions, leeks and carrots on olive oil.

Pour the broth to saucepan, bring to boil, add potatoes and simmer for 5-10 minutes, add cauliflower, celery root, green beans, sauteed onion, leeks and carrots.

Salt and pepper to taste and simmer for 10-15 minutes until ready.

Pour cooked soup in bowls and garnish with greens to taste.


Ready in: 30 minutes.
