Onions - 1 pcs. (chopped)
Carrots - 3 pcs. (chopped into thin slices)
Celery - 1 pcs. (finely chopped
Croutons - 3/4 cup
Garlic - 4 cloves (crushed)
Tomato paste - 1 tbsp
Chinese cabbage - 1/2 pc (sliced into strips)
Chicken broth - 4 cups
Water - 1 cup
Olive oil - 2 tbsp
Parsley (chopped)
Salt and ground black pepper to taste
Directions:
Heat the oil in a large saucepan . Pour the onions, carrot, celery and garlic. Sprinkle with salt and pepper. Cook, stirring occasionally, 8-10 minutes. Add tomato paste and cook for 1 minute.
Pour the broth and water. Add cabbage and croutons. Simmer for 15-20 minutes. Salt and pepper to taste, add parsley.
Pour cooked soup in bowls and garnish with chopped parsley and croutons.
