Recipe of Vegetable Soup with Turnip
Number of servings - 6
Ingredients:
Celery - 4 stalks (thinly sliced)
Carrots - 4 pcs. (peeled and diced)
Small turnip - 1 pc. (peeled and diced)
Hot water - 5 cups
Bay leaves - 2 pcs.
Dried thyme - 1 tsp
Dried coriander - 1 tsp
Chopped parsley or cilantro - 1 tbsp
Olive oil - 3 tbsp
Salt and ground black pepper to taste

Directions:
Heat oil in saucepan, add celery and fry it for 2 minutes. Add carrots and turnip and cook for another 5 minutes.
Pour water, add bay leaf, dried thyme and coriander. Simmer about 30 minutes, until vegetables are tender.
Pour half of the soup in a blender and make puree. Pour back to saucepan, bring to boil, salt and pepper to taste.
Pour cooked soup in bowls and garnish with greens to taste.
Ready in: 40 minutes.
