Directions:
Heat olive oil in a large saucepan. Add vegetable mix and bacon. Saute, stirring occasionally, for 3-5 minutes.
Add lentils, tomato, broth and 1 cup cold water. Cover and bring to a boil. Reduce heat and simmer 15-20 minutes.
Add green beans 5 minutes before the end of cooking. Add chopped parsley. Salt and pepper to taste.
Pour cooked soup in bowls and garnish to taste.
Ready in: 35 minutes.
