Minestrone Soup with Tagliatelle





Number of servings - 4

Ingredients:

Beef broth - 6 cups
Tagliatelle - 3 1/2 oz
Smoked ham - 3 1/2 oz (finely sliced)
Dried white beans - 7 oz (soaked in water overnight)
Tomatoes - 2 pcs. (skinned and diced)
Chili pepper - 2 pcs.
Onion - 1 pc. (peeled and diced)
Carrot - 1 pc. (peeled and diced)
Garlic - 1 clove (minced)
Olive oil - 2 tbsp
Dried thyme - 1 tsp
Parmesan cheese - 4 tbsp (grated)
Salt and ground black pepper to taste


Directions:

Pour the broth to saucepan, bring to a boil, add beans and simmer 40 minutes.

Heat olive oil in a pan and saute onion with garlic 1-2 minutes. Add tomatoes and cook 5 minutes.

Add contents of the pan to saucepan with the beans. Add tagliatelle, thyme and simmer 20 minutes. Salt and pepper to taste.

Add ham to the soup and simmer 5 minutes.

Pour cooked soup in bowls and garnish with grated Parmesan cheese.


Ready in: 75 minutes.
