  1. Sauté mushrooms. Melt butter in a large pot over medium-high heat. Add mushrooms and cook 10 minutes until golden. Add shallots and cook 4 minutes. Add garlic and thyme. Cook 1 minute.
  2. Deglaze. Add wine and cook until nearly evaporated. Add broth and simmer 15 minutes.
  3. Blend. Remove thyme stems. Blend half for creamy texture while keeping some chunks.
  4. Add brie. Reduce heat to low. Add brie cubes and cream. Stir constantly until brie is fully melted and incorporated. Season with salt and white pepper. Serve immediately.
