  1. Cook onions. Melt butter in a large pot over medium heat. Add onions, thyme, and bay leaf. Cook 20-25 minutes, stirring occasionally, until very soft and golden.

  3. Blend. Remove thyme and bay leaf. Blend until smooth.
  4. Finish. Stir in cream and heat gently. Season with salt and pepper. Serve topped with bacon if desired.
